Over the past years, we have been fortunate to deal with the most exclusive restaurants in Costa Blanca and in our opinion, we feel at this time that this restaurant is unique and deserves the accolade of number one to dine at.

If you’re looking for a unique dining experience for a change, look no further than the restaurant set in the 500-year-old caves of Las Cuevas in San Miguel de Salinas. A huge favourite of ours at Spain Life Exclusive, lately we’ve seen an amazing response amongst our readers upon trying this fine-dining establishment set in an environment like no other. Robert took over Las Cuevas in 2016 after honing his years of experience running other restaurants in Costa Blanca.
Set in a one-of-a-kind location, the caves are found in the village of San Miguel de Salinas which date back to the early 19th century. These houses were built from soft layers of sandstone eroded between harder rocks. Farm workers would chisel away at the soft layers to create a sizable dwelling. Today, these houses have been converted into art studios and craft shops, and the largest of them has become a family restaurant: Las Cuevas Restaurante.
Las Cuevas Restaurant is a high-class restaurant run by Norwegian chef and entrepreneur, Robert Johansen, and is located in the centre of the village of San Miguel de Salinas. Once a bakery, this historic setting has been transformed into a beautiful restaurant, with a terrace open for the summer months and an interior below ground for in-between seasons and winter.
It’s said people lived in these same caves where this restaurant is located due to a lack of material to build regular dwellings Something that will catch your attention was that when people finish their dinner, they get up and visit all the rooms, which is what we also did. The menu is based on fresh local produce, and they have an extensive wine list.
A Unique Menu to Match a Rare Setting
A 4-course daily menu is served every day from 1 pm and a 5-course sampling menu is served every day from 6pm to 12pm. In Las Cuevas, you will find a very complete menu with various in, and we believe that it’s quite surprising to find a restaurant of a such high standard in this traditional village in Vega Baja, making it a true gastronomic gem. Robert focuses on Mediterranean produce, creating dishes based on the French kitchen, with inspiration from both Spanish and Scandinavian cuisine.
Here are some absolute must-try dishes to savour upon your visit:
Lamb Shank, which is slow cooked for 12 hours and comes with garlic mashed potato, winter Vegetables and rosemary & honey red wine sauce.
Venison Loin with Beetroot, roasted vegetables, coarse grain mustard potato pure, wild berry reduction.
Oven baked fillet of Cod with the crust of herbs & dry nuts, with Pearl Barley risotto infused with preserved lemon and thyme.
Tender Fillet Steak with truffled Cauliflower foam, fondant potato and winter vegetables.
Duck Confit, with wild berry reduction and winter vegetables
For dessert, we recommend its indulgent cheesecake.

As a warning, it is not so easy to book a table in this restaurant, we tried twice and it was not possible, the third time we managed to get a table, you have to book a couple of days in advance.
