Dexcaro combines two completely different concepts in one restaurant. Urban Food, perfect for dining with family and friends in a more informal and street-style setting, and Ossadía as a place for avant-garde cuisine aiming for a Michelin star.
Both concepts share the kitchen, which has been the case for the last 5 months, when Carlos, the chef, decided to merge them into Dexcaro. However, depending on which type of cuisine you choose, the setting will be different. Urban Food uses a more industrial-style area, while Ossadía has a private dining room or is inside the actual kitchen.
Urban Food has been in operation for 3 years. It opened in December 2020 at Els Magazinos market in Denia. One year later, in 2021, Osadía was introduced with its gastronomic menu. Now, in 2023, they have merged into the same location to provide a better experience for both diners who want to enjoy a different culinary experience in Denia.
Who Is Carlos G Moreno?
This chef is originally from Granada and has been settled in La Marina Alta in Denia for the past 12 years. He received his training at Puerto Blanco, a restaurant located in Calpe, and also worked at Michelin-starred establishments. Three years ago, amidst the pandemic, he opened Urban Food and Ossadía in December 2020.
The cuisine is a fusion of Mediterranean and Asian flavors with a touch of Peru. Carlos explains that he has always been drawn to Asian cuisine because of its discipline, and Peru has also received these Asian influences.
DISHES THAT BREAK CONVENTIONS
One visually striking dish is the Wagyu (sashimi on a skewer). Another standout dish is the Beluga lentils (Dalmakhani), which transport you to India and are cooked as if they were an Italian risotto.
URBAN FOOD: STREET-STYLE MENU IN A VIBRANT ATMOSPHERE
“Breaking the rules is the philosophy of our more rebellious section of the restaurant. That’s how we cook, create our recipes, and lead you to feel unique sensations with each dish,” says the chef.
The rebellious dish at Urban Food is the hot dog served with Satay sauce with peanuts and popping candy that explodes in your mouth.
Urban Food serves only menu dishes at individual tables. The good news is that well-behaved and controlled dogs are allowed.

Like a journey from China to Galicia, the delicious Wotong with Octopus is served, accompanied by Chinese Hot and Sour Soup made from shrimp head juice.

A novelty that the chef has shared with Spain Life Exclusive is their plan to expand the restaurant in Valencia in the future. It’s worth noting that Dexcaro was recently named a rising star by the Gastronomic Fair of Alicante, so you can experience the restaurant there as well. Dexcaro will be giving presentations and offering bites from the menu from September 29th to October 2nd.
