Sourcing freshly caught fish from the local market and establishing direct relationships with farmers in Pedreguer, Denia, and XĂ bia enabled them to craft menus that resonate with the essence of each season.

The proximity to Valencia and Alicante grants access to a diverse array of suppliers, enhancing the restaurant’s offerings with seasonal specialties such as autumnal mushrooms, enriching the culinary tapestry.

The wine selection at Volta I Volta mirrors the Mediterranean essence, emphasizing wines from the Valencian Community’s three D.O. regions. This enables seamless pairings with their delectable dishes.

Prior to settling in XĂ bia, the proprietors honed their culinary skills abroad, infusing an international flair into their creations. Their repertoire includes traditional Valencian delights like the classic appetizer, garrofĂ³n (butterbean), a homage to the foundational ingredient of Valencian paella, sourced directly from Alboraia fields.
