Recently, Dexcaro & Ossadía partnered with El Corte Inglés in Valencia and Alicante to present an exceptional dessert at the Sabores de Temporada KM0 event. Carlos crafted a dish based on nisperos in three different versions, each more delicious than the last. Would you like to know more?
First, a nispero quince, carefully crafted to highlight the citrusy and sweet nuances of this special fruit from Callosa d’en Sarrià. Then, a nispero sauce that brings a fresh and fruity touch to the dish, perfectly complementing the creaminess of the quince. And as the crowning touch, a nispero panna cotta, breaking with traditional texture to bathe the dish in its smoothness and unique flavor.
These three nispero versions were accompanied by Marcona almonds with thyme and rosemary, and gorgonzola cheese.
