You can start your relaxing experience in the Vall de Cavall restaurant with a lobster salad with green kumato tomatoes, cockles and a passion fruit vinaigrette or a healthy dish of salmon sashimi with wakame seaweed, sesame and wasabi. It’s so spicy and delicious! If you fancy something hot you have to taste their excellent braised octopus with miso mayonnaise and “Tobiko” (flying fish eggs) or the dish recommended by the chef, pan-seared foie gras on a corn sponge cake and “oloroso” (sherrywine) flavored vegetables. As a main course the chef suggests the Black Angus tenderloin steak with truffle and sweet wine sauce and foie gras escalope. Their crispy roasted piglet in the Segovian style with pumpkin and citrus fruits purée is an authentic delight! If you prefer fresh fish, we highly recommend the dish of fish from the market with broad beans and artichokes, stewed in the Mozarabic style or the sea bass Japanese stew with sushi rice and onion caramelised in soy sauce.
For dessert the chef has prepared a sweet selection of elaborate dishes, such as the hot chocolate fondant with citrus sorbet, the green apple crémeux on a shortbread and green icing, the cheese board or the peach puffcake with a passion fruit mousse.
