Brothers Jacques and Mathieu Lagarde didn’t grow up in a single food tradition. Their summers were spent in the Portuguese countryside, where their grandmother grew, raised and cooked everything by hand. The rest of the year was in Paris, where they trained in some of the city’s most demanding kitchens. The result is Cascada, a restaurant where you can taste both the roots and the refinement.
Cascada doesn’t fit neatly into one category. It’s shaped by classical French technique, but its menu is influenced by years spent in Australia, New Zealand and Spain. The foie gras is marinated with Tahitian vanilla. The sea bass comes with blueberries and celery vierge. Tequeños are served with sugarcane honey. The combinations are surprising, but never forced.
Charcuterie done their way
Charcuterie is a cornerstone of what the Lagarde brothers do. Their approach is full use, full flavour. Cuts that many chefs avoid are given the same attention as fine fillets. Their suckling pig dish is deboned, stuffed and reassembled with precision. Duck prosciutto, marrow butter, boudin noir and smoked blueberry desserts all sit side by side on the menu.
Their charcuterie isn’t just limited to meat. Some versions use seafood, others even show up in the dessert course. It’s not for show, it’s part of a belief that food should be used well and with intention.
Sustainability with substance
The team grows much of its produce between Marbella and Istán and is moving towards becoming fully self-sufficient. They don’t market themselves as a sustainable restaurant, but the approach is built into everything they do, from fermented preserves to kitchen trimmings turned into broths, sauces and charcuterie.
Always evolving
There is no set style at Cascada because the brothers don’t stand still. They take part in collaborations, travel for events, and continue to test new techniques and ingredients. Yet the foundation remains the same: precision, seasonality and full respect for the product.
