Las Cuevas unveils its new 5-course tasting menu and an irresistible selection of dishes

Las Cuevas is the top restaurant in Costa Blanca. Experiencing their culinary delights is a must. And in this regard, their new tasting menu will not disappoint you.

This time, we aim to tempt you with some special dishes prepared by their chef, Robert Johansen. The selection is simply irresistible!

 

LAMB COULANT

This dish features incredibly tender lamb leg, cut into small pieces and served with a sauce and potato puree. The food is presented in a ring with a tower in the middle—a layer of potato puree below and delicious beef on top. To enhance this delicacy, the chef recommends pairing it with Choza, a Tempranillo from La Rioja that will give your taste buds immense pleasure.

BEEF TARTARE: Exclusive to Las Cuevas!

Here, the fillet of beef is sautéed and finely chopped. It is served on a crystal bread with stracciatella di burrata. The beauty of this dish is that you can only find it at this restaurant. It pairs perfectly with Clea, a Ribera del Duero wine made from Tinto Fino grapes.

HOMEMADE DUCK PÂTÉ

A classic duck pâté, but prepared so deliciously that you won’t be able to resist. Once you try it, you’ll definitely come back for more! This pâté pairs well with Matsu El Pícaro, a wine from Vino del Toro that Las Cuevas highly recommends.

PRAWNS

Who can resist fresh prawns? This dish, with its spicy Asian flavor, is out of this world. It consists of raw prawns sautéed with a homemade coconut milk sauce and served with glass noodles. Choose a Vergel Sauvignon Blanc from the Alicante region and elevate your dining experience to another level!

Another recommendation from the chef is Enrique Mendoza’s Moscatel, which pairs very well with the dishes.

HIGHLIGHTED DESSERTS

For those who can’t resist a good dessert to finish off their meal, there’s a top 3 selection.

  1. White chocolate sphere filled with dried fruit chutney and a scoop of ice cream. The waiter will approach the table and pour homemade caramel over the sphere, causing it to break and mix with the filling. This delicious dessert is accompanied by strawberries, blueberries, and raspberries.
  2. Passion fruit panna cotta, a refreshing dessert perfect for hot days.
  3. Caramelized bananas with coconut ice cream.

To accompany the desserts, Oporto wines, both white and red varieties, are suggested.
