Observing a shift towards mindful dining, Carola notes the growing preference for non-alcoholic pairings. Inspired by the tea sommelier trend, she delves into tea experimentation, exploring its nuances and traditions across cultures.
Carola’s innovation extends to crafting tea-infused cocktails. She shares a delightful recipe for an Earl Grey mocktail with a twist of orange.
Ingredients for 2 long drink glasses:
- 16 g loose Earl Grey tea
- 500 ml boiled water
- 500 g ice cubes
- ½ orange
- Pinch of vanilla sugar
- Splash of tonic or sparkling water
Preparation:
- Steep the Earl Grey tea in boiled water for about 3 minutes at 95 degrees.
- Strain the tea over 300 g of ice, allowing it to cool.
- Muddle half an orange in a cocktail shaker, adding the squeezed orange juice, vanilla sugar, and extra ice cubes. Top up the shaker with the cooled tea.
- Shake until cold and condensation forms on the shaker’s exterior.
- Pour through a sieve into two long drink glasses with ice cubes. Top with sparkling water or tonic. Garnish with an orange slice.
